Food lab of Gallery by Chele, where the chefs test their latest creations! Had the six course tasting menu, of which the stand-outs (for me, at least) were the 8-10 (Octopus-Pinakbet-Shallots), the Heritage (Kare-Kare-Banana Heart-Jamon Iberico), and the Turf (Wagyu-Laing-Smoked Roselle). Special shoutout to the Snap (Red Snapper-Cacao-Eggplant, @cheryl's favorite) and the Torrija (Coconut-Rum-Brioche)!
