The East meets West in the Grande Dame of the Far East! Open-air stalls, temples, and night markets co-exist with multinational corporations, soaring skyscrapers, and first-world developments on this traditional yet forward-looking city.
Breakfast has to be damn good to motivate me to eat in the mornings. I’m usually happy with an orange juice and an otherwise empty belly. But if you insist on breakfast, the recommended spots in this list keep me excited! The memories... read comments because sometimes it’s just a matter of convenience =)
What I like about Asia is how you’re never done with finding new flavors. I’m always looking forward to these surprises—the flavors and the way it’s cooked is so different from how we do it in France. This can inspire me to create a dish, even though I do not try to copy or do it the same way. I think it’s interesting. I do dim sum a little differently from the locals. Instead of eating everything as they come, altogether, I prefer to eat the steamed first before the roasts. As a Frenchman and a chef, this is something that I do because in France, we start light and we go up.
What I like in Hong Kong is eating in dai pai dongs—nothing fancy, the chairs are plastic, the cutlery is almost plastic, hygiene is questionable, but when you eat there’s a wow factor. I love this contrast. It’s cheap, but out of this world! To be honest, the French, we don’t have this concept too much. Normally, we spend a lot of money on food, but it’s very refreshing to try something yummy yet affordable.
