Always searching for hidden gems
After a bit of rain in the morning, I love walking around in different areas around the quainter parts of the city. I find town too commercialised, but there are such nice little spots cropping up all over, as the “sea turtles” (people who study abroad and bring ideas back) make their way home. The slower relaxed ambience of retirees and quiet helps me take a deep breath and relax. That sense of peace that washes over me is intoxicating and I need more days like that. Happiness. Like this cat.
Breakfast has to be damn good to motivate me to eat in the mornings. I’m usually happy with an orange juice and an otherwise empty belly. What I like about Asia is how you’re never done with finding new flavors. I’m always looking forward to these surprises—the flavors and the way it’s cooked is so different from how we do it in France. This can inspire me to create a dish, even though I do not try to copy or do it the same way. I think it’s interesting. I do dim sum a little differently from the locals. Instead of eating everything as they come, altogether, I prefer to eat the steamed first before the roasts. As a Frenchman and a chef, this is something that I do because in France, we start light and we go up.
